Susan's Soda Bread

Recipe created by Susan S
Made without soy, peanut, egg, tree nut, wheat, gluten, corn, fish, shellfish, sesame.

Ingredients
2/3 cup sorghum flour
2/3 cup corn starch
2/3 cup tapioca starch
2 tsp xanthan gum
1 1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1/2 cup dried currants (optional)
1 1/2 tsp caraway seeds (optional)
1 cup whole milk yogurt

Instructions
Blend the dry ingredients then stir in the yogurt. Knead into a round loaf on a floured surface (I used sorghum flour with this). Place on a cookie sheet and bake at 350 for 45 to 50 minutes.

Substitutions
Can be made corn-free by using potato starch. Be sure to verify any additives in your yogurt as many contain pectin, gums or starches.

Angie's Unscalloped Potatoes

Recipe Created by Momma2Joey
Made without milk, soy, peanut, tree nut, wheat, gluten, egg, fish, shellfish, and sesame.

Ingredients
2 medium onions, thinly sliced
1/4 cup dairy- and soy-free margarine, if necessary, or oil
2 Tbsp cornstarch OR 1/4 cup sweet rice flour
2 1/2 cups prepared Dari-free milk alternative
2 1/2 pounds Idaho potatoes
5 slices bacon, cooked & chopped
to taste salt & pepper

Instructions
Cut the onions in half and run through the food processor to slice. Saute in margarine or oil until almost caramelized. Season with salt and pepper. If using cornstarch, add it to the Darifree and mix, then add mixture to the pan. If using sweet rice flour, add it to the onions and stir to coat, then add Darifree.

Bring mixture to a low boil and season with salt and pepper. Adjust thickener if needed. Grease the 9x13" pan with margarine or oil spray and lay down half of the potatoes. Season with salt and pepper, layer half of the bacon and half of the Darifree/onion mixture. Repeat layering. Cover and bake at 350F for 45 minutes, then uncover and bake for 20 minutes or until potatoes are fork tender.

Comments
You could also add some garlic to the onions.

Substitutions
Use dairy, egg, soy, wheat and/or gluten free ingredients as needed. This recipe is not corn free because DariFree contains corn derived crystalline fructose.
