We will be creating cards featuring children's artwork this year and invite your children to submit their creations! We will be creating an ALL-OCCASION card, and a HOLIDAY card. Your children are welcome to submit artwork for one or both cards. Please have your children use regular 8.5 x 11 inch sheet of paper for entries. Winning entries will receive a certificate and a KFA "Please Don't Feed Me" monkey to stuff; all runners up will receive consolation gifts and a certificate of participation.

Trace Adkins a Finalist for the Celebrity Apprentice


Country music star Trace Adkins is appearing on the NBC's The Celebrity Apprentice to raise awareness and money for his charity of choice, the Food Allergy & Anaphylaxis Network (FAAN). This season's winner will be announced live on a live, two-hour broadcast of The Celebrity Apprentice airing Thursday March 27th. Check your local listings.


Minnesota Food Allergy Conference April 5th


The Anaphylaxis & Food Allergy Association of Minnesota (AFAA) will host its 2008 Food Allergy Conference and Exposition on Saturday, April 5th in Minneapolis. Session topics will include Food Allergy Basics; Food Labeling; Food Allergy Research Update; Nutritional Challenges; Asthma & Rhinitis; School Safety; Eczema & Hives; an "Ask the Doctors" Panel; a Panel for Dietitians; and more. FAAN Annual Food Allergy Conferences


This year's conference theme is "Food Allergies: Living and Learning." Learn tips and strategies for managing food allergies. Conferences will be held in Baltimore, MD (March 29), Rosemont, IL (May 10) and Tarrytown, NY (May 31). [More Info]


Reading (PA) Phillies Food Allergy Awareness Games


Save the dates: May 16, July 25 and August 15. The Reading Phillies will be offering three games this season with peanut free sections. Allergy organizations, including Kids With Food Allergies and local support groups, will be present to provide food allergy educational materials to fans in attendance. Facts About Sesame Allergy

Facts About Sesame AllergyAwareness of sesame allergy in the U.S. is growing as eating habits become increasingly internationalized. Since sesame is not considered one of the major food allergens at this time, the Food Allergy Labeling and Consumer Protection Act (FALCPA) does not include sesame among the foods whose presence in a food product mandates clear labeling. Even the current feeding recommendations from the American Academy of Pediatrics don't advise the delayed introduction of sesame or other seeds.

Sesame can be a hidden ingredient in foods in places such as "spices" or "natural flavors." It is also in sesame oil, an ingredient found health and beauty products such as skin cream and lip gloss.

Chocolate Chip Cookie Dough Truffles

Made without milk, soy, peanut, egg, tree nut, corn, fish, shellfish, sesame.

Ingredients
1 cup margarine
1/4 cup granulated sugar
1/2 cup firmly packed brown sugar
2 tsp vanilla
1/4 tsp salt
2 cups flour
1 6 oz. pkg semi-sweet chocolate chips
2-3 Tbsp water (optional)
1 12 oz. pkg semi-sweet chocolate chips
1 Tbsp Bakers Paraffin (optional)

Instructions
In a large bowl, beat margarine and sugars until fluffy. Add vanilla and mix well. Mix in flour and salt until well blended. Batter will be stiff. Stir in chocolate chips. Only add water if it's too stiff to mix, and use sparingly. Form dough into 1" balls and refrigerate for at least an hour.

In a double boiler, melt the chocolate chips and paraffin together. Using two spoons, roll the chilled dough balls into the melted chocolate and place in truffle cups. Makes about 52 pieces. Delicious!

Substitutions
Can use butter or margarine. Milk chocolate chips can be substituted for the semi-sweet chocolate chips.

This recipe has not been tried gluten/wheat free. I would try these with a sorghum and starch blend to make them gluten-free. You'd want to pick a flour that tastes good raw and doesn't have much grit.

Use dairy, soy, egg, corn, and nut free ingredients as needed. Use dairy & soy free margarine if necessary.

Annika's Berry Cake

Recipe Created by Amy Hugon
Made without milk, peanut, tree nut, wheat, gluten, egg, corn, fish, shellfish, and sesame

Ingredients
1/3 cup shortening
3/4 cup sugar
2 Tbsp Egg Replacer mixed with 1/4 cup water
1 tsp vanilla
2 1/4 cups gluten-free flour blend, divided
2 tsp baking powder
1 tsp xanthan gum
1/2 cup rice milk soured with 1 tsp lemon juice
1 12 ounce package frozen mixed berries (strawberries, blueberries, raspberries)

Instructions
Preheat oven to 375 degrees F. Prepare an 8x8" pan with non-stick cooking spray.

Cream shortening and sugar. Stir in vanilla and Egg Replacer mixture; mix well.

Stir in 2 cups flour, baking powder, xanthan gum, and rice milk. Mix well.

Separately, chop strawberries so that they are the size of blueberries. Toss 1/4 cup flour with all the berries so they are coated. Fold berries into batter, and pour batter into prepared pan.

Bake for 30-40 minutes or until done.

Comments
Equal parts rice flour, cornstarch, and tapioca starch may be used for the flour blend.

Substitutions
Any soured milk or milk alternative can replace the soured rice milk.

If you can use eggs, the egg replacer mixture can be replaced with 2 whole egg.

Use dairy, soy, egg, wheat and/or gluten free ingredients as needed. Use dairy and soy free shortening if necessary. This recipe can be made corn free by if using an egg in place of the egg replacer and verifying that the flour mix, baking powder and other ingredients are corn safe.
