New KFA Cookbook Rating Survey


We will be adding allergy book ratings this year. In order to do this, we need your help. We'd like to begin with a cookbook survey, which should take only five or ten minutes. Just give us your rating and opinions of books you've tried. We will compile the results and post a summary of the ratings and comments we receive. Click Here to take the survey. New Valentine's Day Food Allergy Awareness e-Cards

Two good reasons for reading labels EVERY time


  • Current U.S. food labeling regulations allow for an item to be labeled as "nondairy" on the package even if it contains casein, a milk protein. Read more in our resources section.

  • Some of the "vitamin water" and "protein water" products available in stores contain milk derivatives, which can cause severe reaction if consumed by someone allergic to milk.

Sandler was determined to bring the yummy, safe confections she'd perfected for her son, Benjamin, who has life-threatening food allergies, to the rescue of other parents who were struggling to find delicious treats for their children with food allergies.

While milk, eggs and nuts get left out of every Divvies treat, the key ingredient to the company's success is that kids don't get left out when it comes to eating and celebrating. Hence, Divvies tag line: "made to share"! Martha Stewart invited Lori and her son Benjamin into her television kitchen to share with her world-wide audience how simple it is to bake something sweet and delicious that can include rather than exclude guests with food allergies.

"Isn't it nice that your mom makes all these treats for you?" Martha asked Benjamin on set. Benjamin let Martha know that his mom doesn't just make this whole line of gourmet treats just for him, but for everyone.

Iron Chef KFA Competition


The Iron Chef KFA Food Competition is one of a number of benefits for our Family Membership Subscribers.

KFA Iron Chef has returned just in time for some decadent recipes perfect for Valentine's Day. The format is even more user-friendly, with all of the recipes easily accessible on a special Valentine's Battle "Indulge Us" Web page.

Scrumptious recipes include
Black Forest Brownie Torte, Bite-Sized Chocolate Crisps, and the pictured Candy Bar Explosion Parfait.

There are nine recipes up for judging in the Valentine's Battle "Indulge Us". You may judge as many recipes as you desire, or even just one. There are treats for most food allergy needs! To join in on the judging of the recipes, simply make the recipes according to the directions, eat them, and report back to rate the recipe. All judging needs to be completed by February 1st. Make the recipes now to practice for that special someone on Valentine's Day!

Winter Warmth

While the weather in many places has been very cold, there are many recipes in our Safe Eats Recipe Database perfect for keeping the family warm. You can find soups, stews, hot beverages, and more. Here are a few recipes to chase away the winter chill. For more recipes to make your cooking easier, from breakfast through dessert, visit our Safe Eats Recipe Database.

Reminder: These are recipes donated by members and have not been tested in a test kitchen. Be sure to verify the safety of all ingredients.

Crock Pot Hungarian Goulash

Made without milk, soy, gluten, wheat, peanut, egg, tree nut, corn, fish, shellfish, sesame.

Ingredients
1 1/2 lbs. lean stew beef
1/4 cup flour
salt and pepper to taste
2 Tbsp olive oil
2 Tbsp Hungarian paprika
small bag baby carrots
8 ribs celery, diced large
2 medium onions, diced large
2 cloves garlic, minced
water
4 large potatoes, diced large (optional)
1 1/2 cups frozen peas (optional)

Instructions
Cut meat into bite sized pieces. Coat meat with flour seasoned with salt and pepper. Be generous with the salt as this dish tends to take a lot of salt. Heat oil over medium-high heat in a large skillet and brown meat on all sides. Add more oil if sticking occurs. Add paprika and saute for about 1 more minute.

Layer ingredients in crock pot and add water just to cover. Cook on low for 8-10 hours on until everything is tender. You can cook it on high for about 5 hours, on the stovetop in a heavy covered pot on a very low simmer, or in a tightly covered casserole in the oven at 325 degrees F. Stir occasionally, especially if using one of the quicker cooking methods.

If using potatoes, add after 4 hours of cooking. Add them during the last 1 1/2 to 2 hours if using the faster cooking methods. Stir occasionally. Add peas during the last hour of cooking if using. Adjust seasoning before serving. If using potatoes, serve as is, otherwise serve over hot pasta.

Substitutions
Choose flour based on allergen-needs (wf, gf, etc).

Baby carrots can be replaced by 4-5 large carrots cut in a large dice.


Zachary's Hot Chocolate

Recipe Created by Jessica36
Made without milk, soy, peanut, tree nut, wheat, gluten, egg, fish, shellfish, and sesame

Ingredients
2 Tbsp Vance's Dari-free Chocolate Mix
1 Tbsp Hershey Cocoa Powder
1 Tbsp sugar
1 Tsp vanilla extract
8 ounces hot water
Marshmallows (optional)

Instructions
Mix dry ingredients throughly in a measuring cup. Pour hot water over mixture, mix throughly with a whisk or small hand mixer. Serve. Add marshmallows if desired.

Substitutions
This recipe is not corn free because the crystalline fructose in the Dari Free is derived from corn.

Use dairy, soy, egg, peanut/tree nut, wheat and/or gluten free ingredients as needed.
